I've been using Windows 10 almost from day one. I really do not understand why those strange things are happening. When GFE was updated to v3.0, for example, Windows 10 didn't uninstall it; instead, GFE offered me to update and I did it. I've got all sorts of apps in both my W10 machines and never experienced this problem at all.
I personally always update because hey why not. W10 has pulled some unrequested reboots on me as well, but never while gaming, and it tends not to do it when you set your machine not to suspend or sleep. My desktop has gone days with an update in line without rebooting.
It's difficult to get a 100% private setup these days, which is why I gave up on it, much to my annoyance because I'm quite bothered by all the "customized" services offered by everyone (MS, Google, Facebook, heck even Valve). Something that really annoys me is the lock screen where MS tries to "guess" my tastes and let me choose a different background. However, I do not remember there being an option like this activated in my PC. I wonder if the only way to make it go away is to pick an image myself.
There are also reports of continuous data transfer between home Windows 10 computers and Microsoft's servers, which is worrying because it's not always clear what is being transferred.
What I recommend doing is to hunt for every privacy setting and/or those you believe are tied to data transfer with Microsoft, and disable them. No more Cortana, no customized search, no recommendation in Start Menu, no nothing. There's still the unrequested calling home, though.
