I'd recommend GZDoom as a source port, if you like smooth mouse look like Polymost in eduke or Megaton edtion, aka OpenGL acceleration. You can still disable texture filtering etc so the textures are in their original pixally glory, and lots of other options. And there's a way to disable the 3D acceleration also. Or you could just download regular ZDoom too. Those are the most popular ports, Chocolate is for if you're really looking for a 90s authentic experience like mentioned above, I personally prefer GZDoom.

And while we are at sound department, not sure how much Doom purist you are, but there is this Sound HQ pack made by Perkristian, that recreated all Doom sound effects by searching for their origins from sound libraries Id Soft used. And then replacing them with their higher definition counterparts from those libraries.
