I am trying to run Zoombinis Mountain Rescue and Zoombinis Island Odyssey on Dosbox-x with Windows 98 as a guest os
I have managed to make them work properly, except...
-the copy protection of Mountain Rescue prevent me to go further than the mindscape spash screen as I use an iso and can't use the physical cd/dvd driver to read it (limitation)
-Island Odyssey run properly but I have a looping beeps with the sound

Regarding Mountain Rescue, how are you using it as an iso? I remember at the time copying the disc and running into the copy protection, but recently I was using WINE to run it only for it to stop working later for unrelated issues. You might want to try running the ISO inside and outside the emulator, that is, making a virtual drive outside the emulator. Otherwise, well, I don't think there's a noCD crack for it.

As for Island Rescue, eh, maybe it has something to do with your emulated version of Windows's sound drives?

is Soundblaster16vibra the best choice to run these games ?
or does it have to do with using pentium 2 (with MMX instructions) ?

I don't know, every time I've used a VM for emulating games I haven't had any issues once I got past the sound drivers. That said, if my memory is correct, Island Odyssey was kind of janky at the time, since me and my family never got very far in it and I don't think that was down to poor gameplay. That said, I notice that looking at the system requirements that there's a Macintosh version, maybe try it through a Macintosh emulator? Though I must admit, I've never tried something from the 21st century in a Mac emulator.

I despise anything that isn't windows

oddly Island Odyssey is less demanding than Mountain rescue as they dropped the 24 bits colours for 16 bit colours as well as the copy-protection

i will try some adjustments
